Saturday, I went to the Farmer's Market to get asparagus from my favorite farmer. I decided to wander around to see who was back and what was new for this year. I saw a booth with grain samples and fresh ground bags of flour. Read more . In the middle of the table was a plate of graham crackers. THEY WERE AWESOME! I was good, and only took one, but I did take a recipe and a bag of spelt four home with me!
Ingredients:
2 cups whole wheat flour
1 cup spelt four
1/2 cup shortening
3/4 cup brown sugar
1/4 cup milk
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla
pinch of salt
Directions:
1. Cream shortening and sugar, add vanilla
2. Mix dry ingredients, add flour mixture alternately with milk. Mix well after each addition.
3. Chill dough until firm, several hours or overnight.
4. Divide dough into half. Roll out each portion on floured surface to 1/8 inch thick.
5. Cut into squares as you wish. Make a line down the centers with the back of a knife.
6. Place on greased baking sheets. Mark each square with prongs of a fork.
7. Bake at 350 for 10 to 12 minutes or until crisp and edges are browned.
8. Remove immediately from baking sheets and cool on wire racks.
