This is a very moist tasty cake. Can be made in loaf pans without the Icing, or layer cake with it. Gives you two different options.
Ingredients:
1/2 lb. butter
2 cups sugar
5 eggs
1 cup coconut
1 cup chopped walnuts or pecans
2 teaspoons vanilla
1 teaspoon baking powder
1 (1lb. box graham crackers)
1 cup milk
icing
1 stick butter
1 lb. powder sugar
1 #2 can crushed pineapple, drained.
Directions:
1. Cake
2. Cream butter and sugar together
3. Add eggs one at the time and beat well
4. Stir in Coconut, nuts, vanilla and baking powder
5. Add graham crackers that have been soaked in the 1 cup of milk
6. Blend well
7. Bake in 3 greased and floured 9 pans at 350* approximately 35-40 min. or bake in loaf pans. Check for doneness with toothpick.
8. Icing:
9. If making into a layer cake soften butter, beat in powdered sugar.
10. Add pineapple one spoonful at a time, until spreading consistancy.
11. Frost and sprinkle with coconut.
