Gourmet Filipino Rice Pilaf

A spin-off of a restaurant dish; this robust pilaf is perfect as a side dish for any cuisine. The texture is nice and creamy with just enough texture. If you have a rice cooker, this dish is very, very simple, but it can also be done on the cooktop [as you would normally cook rice].
Ingredients:
3 cups brown rice
2 cups beef broth
2 cups water
1 cup dried mushrooms, reconstituted in 3/4 cup water (save water for rice)
1 onion, diced
2 cloves garlic, minced
1/2 cup bamboo shoots, canned
2 tbsp olive oil
Directions:
1. Saute onions, garlic and bamboo shoots in olive oil until onions are translucent.
2. Wash rice and leave in rice cooker.
3. Reconstitute mushrooms with water in microwave (high for 30 seconds).
4. Add beef broth, water, reconstituted mushrooms(plus the water they were steeped in), and the onion mixture to the rice.
5. Give it a stir and cook in rice cooker (or cooktop) as you normally would.
6. Stir every 10 minutes until cooked (rice should be creamy and not very wet).
