Gouda Quesadilla With Cilantro-Walnut Pesto

Ingredients:
8 corn tortillas
2 cups gouda cheese, grated
1 cup cilantro, chopped and stemms removed
3/4 cup walnuts, toasted
2 garlic cloves
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons lime juice, fresh
Directions:
1. Place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth.
2. Fill each corn tortilla with 1/4 cup shredded gouda and fold in half. Cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side.
3. Serve with the cilantro pesto.
