Gorgonzola Stuffed Dates Tapas

These stuffed dates come out sweet, salty and savory at the same time. Make great appetizer, or finger food.
Ingredients:
8 oz package dried pitted dates
1/2 cup almonds
1 tbsp. confectioner's(powdered) sugar
1 tsp. water
2 tbsp. crumbled gorgonzola cheese
6 oz. proscioutto, or canadian bacon
salt for seasoning (to taste)
olive oil for drizzling
for sugar syrup
2/3 cup water
1/3 cup granulated sugar
2 tbsp. rose water (can be purchased in middle eastern markets)
Directions:
1. In a food processor combine almonds, confectioner's sugar, 1 tsp. water, and Gorgonzola cheese. Process until nuts are finely minced and the mixture looks like a paste. Set aside.
2. With a knife, cut the dates opened lengthwise(don't cut all the way through).
3. Using a teaspoon, stuff the dates with the nut and cheese mixture. Set aside.
4. Make sugar syrup:
5. Combine 2/3 cup sugar with 1/3 cup water in a small saucepan. Stir over the medium heat until sugar dissolves. Cook and stir for another 7 minutes. Turn off the heat and stir in rose water. Let cool slightly.
6. Cut proscioutto in thin strips lengthwise, then cut each strip in half.
7. Dip stuffed dates, one at a time, in a sugar syrup, then wrap a strip of proscioutto around them.
8. Place dates on a lightly greased cookie sheet. Sprinkle lightly with salt and drizzle with olive oil.
9. Bake at 350F oven for 8 min, or until proscioutto is LIGHTLY browned.
10. Serve warm or cold as appetizer, or finger food.
