Gorgonzola Potato Pie

Mashed potatoes taken to a new level
Ingredients:
2 lbs potatoes
1/2 cup gorgonzola (thinly sliced)
5 tablespoons butter
salt and pepper
Directions:
1. Boil and mash potatoes.
2. Butter a baking dish and evenly spread half of mashed potatoes into it.
3. Cover with thin slices of gorgonzola.
4. Cover with remaining mashed potatoes.
5. Place bits of butter on top and bake at 290°F for 8 minutes.
6. Serve hot, season as desired. Serves 4.
