Gorgonzola Clam Linguini over a Bed of Chili Arugula

when you need to feel good and want something with a bit of substance
Ingredients:
0.5 (8 ounce) box linguine
3/4 cup minced clams
2 tablespoons minced garlic
1 red onion, sliced
1/2 cup gorgonzola
1 sliced red pepper
1 cup broccoli floret, chopped down into crumbs
1/2 cup cherry tomatoes, halved
olive oil
1 green chili pepper, minced
3 cups arugula
chili oil
Directions:
1. cook linguini al dente.
2. in a skillet, carmelize garlic and red onion - medium high.
3. add chili, broccoli, red pepper, then tomato - medium heat.
4. add clam.
5. add gorgonzola and cook until it melts.
6. fold in linguini.
7. plate arugular and drip some chili oil over it.
8. using tongs, place some pasta over greens.
