Good God Greek Pumpkin Pie Visikiotiki Kolokithopi...

The greek version of pumpkin pie, but oh so much more delicious and interesting than its American counterpart.
Ingredients:
1 lb phyllo (after unrolling, keep between 2 damp towels to prevent drying and cracking during use)
1 lb butter
1 medium-sized pumpkin
1 tbs salt
1/2 cup olive oil
1/2 cup sugar
1 tsp cinnamon
1/4 tsp ground cloves
3 cups chopped walnuts
1 cup white raisins
Directions:
1. Cut and pare pumpkin, removing seeds.
2. Cut into 1-inch cubes and grind cubes in food processor until no longer chunky.
3. Place ground pumpkin into cheesecloth and sprinkle with salt.
4. Let stand overnight to remove moisture.
5. Take 8 cups strained pumpkin and place in a pot, adding the olive oil and butter.
6. Simmer for one hour, stiriing to prevent scorching.
7. In last 5 minutes, add sugar and raisins.
8. Remove from heat and add one cup walnuts.
9. Set mixture aside to cool.
10. Brush bottom of 14x20 pan with melted butter and line with pastry sheet,brush with melted butter and sprinkle with walnuts.
11. Repeat this process until 1/2 lb of the pastry sheets are used.
12. Pour pumpkin mixtureinto center and spread evenly.
13. Cover with remaining phyllo sheets making sure to brush each sheet with melted butter and sprinkling with chopped walnuts.
14. Top with 6 individually buttered sheets (no nuts).
15. Trim and cut into 2 diamond shapes.
16. Pour remaining butter evenly over the pie
17. Bake at 375 for one hour.
18. SYRUP:
19. 3 cups sugar
20. 2 cups water
21. 1/2 cup honey
22. While pastry is baking, boil sugar and water until a clear, thin syrup is formed.
23. Stir in honey and remove from heat.
24. Cool.
25. Pour over hot pastry out of oven.
