Good for You Chocolate Chip Cookies

Here is a great comfort cookie that you can feel good about serving your family. The light olive oil keeps the flavor light and doesn't add saturated fat! The combination of chocolate and dried cranberries is oh-so-yummy! (NOTE: the batter will look a little oily, but trust me...it works out great!)
Ingredients:
2/3 cup oat flour
1/2 cup whole wheat flour
1/4 cup packed brown sugar
1/2 cup white sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons ground flax seeds
1/3 cup light olive oil
1 egg
1/2 cup chocolate chips
1/2 cup dried cranberries
1/4 cup chopped pecans
Directions:
1. Mix all dry ingredients in a medium bowl.
2. Next add the oil and the egg.
3. Mix well.
4. Fold in chocolate chips, cranberries, and pecans.
5. Shape into 1 inch balls (or use small cookie scoop) and place on cookie sheet covered in parchment paper.
6. Bake at 350° for 8-10 minutes or until lightly browned.
7. Let cool slightly before removing from cookie sheet.
