Golden Vegetable Casserole With Sage Dumplings

Ingredients:
1 white onion sliced
2 cloves garlic crushed
1 carrot scrubbed and chopped
1 medium parsnip scrubbed and cubed
1 small rutabaga peeled and cubed
1 small turnip peeled and cubed
1 artichoke well scrubbed and quartered
4 ounces chestnut mushrooms halved
1 teaspoon dried thyme
1 tablespoon fresh parsley chopped
1-1/2 pints vegetable stock
1 teaspoon yeast extract
1/2 teaspoon salt
1 teaspoon freshly ground black pepper

4 ounces self rising whole wheat flour
2 ounces vegetable suet
1/2 teaspoon salt
1/2 teaspoon dried sage
1 teaspoon dried mustard
2 tablespoons milk
Directions:
1. Sauté onion, garlic, carrots, parsnip, rutabaga, turnip and artichoke with herbs for 10 minutes.
2. Stir occasionally to prevent sticking then add mushrooms and cook 5 minutes.
3. Add stock, yeast, salt and pepper then simmer gently for 30 minutes.
4. Make dumplings by mixing flour, mustard powder, salt, herbs and vegetable suet in a bowl.
5. Add milk and mix to make a soft dough then form into small dumplings and drop into casserole.
6. Simmer another 15 minutes or until dumplings are puffed up.
