Pizza is a staple dish, but it’s easy to get carried away with the cheese and less-than-healthy toppings. Celebrity chefs Todd English, Candice Kumai and Aaron Sanchez took on the challenge of making a weight-loss friendly version. While each pie has a different healthy hook, they’re all delicious!
Ingredients:
4 pieces whole wheat naan flat bread
1 cup grilled artichoke
2 tablespoons artichokes, spread
1 cup low fat whipped ricotta cheese
1/2 cup shredded lowfat mozzarella cheese
3 cups arugula
1 cup cherry tomatoes
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
1 bunch fresh basil leaf
Directions:
1. Preheat oven to 350°.
2. Brush Naan flatbread with EVOO, then spread on artichoke spread and whipped ricotta.
3. Top with grilled artichokes and cherry tomatoes and sprinkle with shredded mozzarella cheese.
4. Bake in oven 6-8 minutes or until cheese is melted and flatbread is golden. While flatbread is baking, toss together arugula, lemon juice, salt and remaining EVOO.
5. Remove flatbread from oven and top hot, baked flatbread with arugula salad mixture and serve.
