A healthy, hearty bread good for breakfast or a snack
Ingredients:
1 cup all-purpose flour
3/4 cup + 1 tablespoon quick-cooking oats, divided
1/2 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup unsweetened applesauce
1 egg
1-1/2 teaspoons vanilla extract
1/3 cup golden raisins
1/3 cup chopped pecans, toasted
Directions:
1. In a large bowl, combine all dry ingredients except 1 tablespoon of oats
2. In another bowl combine applesauce, egg, and vanilla
3. stir into dry ingredients just until moistened
4. Fold in raisins and pecans
5. Pour into a greased 8inx4inx2in loaf pan
6. Sprinkle with remaining oats
7. Bake at 325 degrees for 50min to 1 hour or until a toothpick inserted near the center comes out clean
8. Cool for 10 minutes before removing from pan to wire rack.
