Golden Harvest Potato Bake

I love new ideas for serving potatoes! What a combo.
Ingredients:
5 lbs. yukon gold potatoes, peeled, cubed
2 medium sweet potatoes, peeled, cubed
5 lg carrots, cut into 2 pieces
3 garlic cloves, minced
1 tsp tarragon
1 cup shredded cheddar cheese, divided
1/2 cup milk
2 eggs
2 tbs cider vinegar
1 tbs butter
1 tsp salt
1 tsp dried parsley
1/2-1 tsp pepper
Directions:
1. Boil the potatoes, carrots, garlic and tarragon; reduce heat, cover and cook 15-20 minutes or until tender. Drain.
2. In a large bowl, mash vegetables. Stir in 1/2 cup cheese, milk, eggs, vinegar, butter, salt, parsley and pepper until blended.
3. Transfer to a greased 9x13 baking dish; sprinkle with remaining cheese. Bake, uncovered at 325 for 25-30 minutes.
