OAMC cooking friendly - healthy chicken nuggets! This recipe comes from the cookbook Delightfully Healthmark a book focusing on how to make smart substitutions for heathier food.
Ingredients:
1/3 cup honey
1/2 cup dry sherry or 1/2 cup white wine
3 tablespoons fresh lime juice
1 tablespoon fresh ginger, minced
2 teaspoons cinnamon
1 teaspoon lime zest
1 garlic clove, minced
8 boneless skinless chicken breasts, cubed
Directions:
1. 1. Combine all ingredients in a ziploc bag and mix together with hands. For OAMC cooking freeze in bag until ready for use. When ready to use, proceed to step 2.
2. 2. Place chicken in fridge overnight, turning occasionally to ensure even marinating.
3. 3. Drain Chicken pieces. Arange on a broiler pan coated with cooking spray. Broil for 5-6 minutes, basting with marinade. If serving as an appetizer, place tookpicks in ech piece!
