Golden Candied Beets

A Sweet Treat Side made with Agave.
Ingredients:
1 pound golden beets
1/4 cup beet liquid
4 tablespoons unsalted butter
4 tablespoons blue agave vanilla flavored syrup
2 tablespoons cider vinegar
1/8 teaspoon cinnamon
Directions:
1. Trim the beets and use the greens in another dish.
2. Wash the beets well, place in roasting pan with 1⁄2 cup water and cover with aluminum foil.
3. Bake at 350 degrees until tender, but not soft (about 1 hour). Cool, and then peel the skin.
4. Retain 1⁄4 cup of liquid from the pan and mix with remaining ingredients. Cook over medium heat 4 to 5 minutes or until syrupy.
5. Cut the beets into medium sized cubes and toss with the glaze. Serve warm or cold.
