Goat's Cheese Cake

Ingredients:
10 ounces goat cheese
1/4 cup sugar
2 tablespoons honey
1 teaspoon vanilla
1 teaspoon lemon zest
1 teaspoon lemon juice
6 eggs, separated
3 tablespoons flour
Directions:
1. Preheat oven to 350°F
2. Combine cheese, sugar, honey, vanilla, zest and juice. Mix well.
3. Add egg yolks, two at a time, mixing to combine after each addition. Stir in flour.
4. Beat egg whites until soft peaks form. Gently fold whites into cheese batter.
5. Pour into well-greased 9 – inch, round baking pan. Bake 25-30 minutes or until wooden skewer comes out clean. Invert onto large plate and cool.
