2 tablespoons goat cheese
1 (2-ounce) whole-grain english muffin, split and toasted
1/8 teaspoon freshly ground black pepper
6 (1/8-inch-thick) slices cucumber
2 tablespoons alfalfa sprouts
Directions:
1. Spread 1 tablespoon goat cheese on each half of warm English muffin. Sprinkle evenly with pepper. Top with cucumber slices and alfalfa sprouts.
