GOAT CHEESE CHEESECAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Darwin Estate in Allen, Texas in 2001. This one is dried and true. I served this at my last card party and it was a huge hit.
Ingredients:
1-1/2 cups breadcrumbs
1/2 cup melted butter
3 tablespoons grated romano cheese
1 clove garlic minced
28 ounces cream cheese at room temperature
4 eggs
1/3 cup half and half
1 cup sour cream
1/2 teaspoon salt
1 cup goat cheese
1/4 cup sun dried tomatoes coarsely chopped
2 tablespoons fresh basil
1 clove garlic minced
Directions:
1. Combine breadcrumbs, butter, cheese and garlic and pat into bottom of spring form pan.
2. Refrigerate.
3. With food processor or electric mixer blend cream cheese.
4. Add eggs one at a time blending well at each addition.
5. Add remaining ingredients and mix well then pour into chilled crust.
6. Place pan on cookie sheet and bake in preheated 325 oven for 1 hour.
7. Turn off oven and let cool with door closed for 30 minutes.
8. Remove from oven then cool completely and refrigerate.
