Goat Cheese And Cranberry Tartlette

This is the perfect hor dourves for a holiday gathering. You can make the filling and bake the puff pastry a day before, then assemble the tartlettes before serving.
Ingredients:
1 sheet puff pastry or pastry shells
1 log goat cheese (4 oz)
2 tbs cranberry sauce (i use wild thyme cranberry raspberry)
3 tbs chopped dried cranberries
2 1/2 tbs cream cheese
1/2 tsp dried thyme
pinch salt and pepper (to taste)
Directions:
1. FOR SHELLS:
2. If using pastry sheets, you need to make shells.
3. When puff pastry is thawed and ready to use, roll slightly on floured surface. Cut as many circles as possible using a round cookie cutter. They should fit the bottom of a mini muffin pan.
4. Squish down the pastry and create a slight lip going up and poke a few holes with a fork. Remove from oven after 6 minutes and poke down center (this is where the filling will go). Bake another 6 minutes or until golden.
5. Alternatively, cut 11/2 inch squares and use same method.
6. Store in airtight container until ready to use.
7. FOR FILLING:
8. Bring Goat Cheese and Cream cheese to room temperature.
9. Combine remaining ingredients and stir vigorously (until really creamy)
10. Season to taste (if its to much goat cheese, add more cream cheese, add more cranberry if not sweet enough, etc).
11. When ready to serve, the filling should be at room temp.
12. Add about a teaspoon of filling (or whatever fits) into the shells and serve.
