I don't remember where I found this recipe, but I'm 300% in love with it! It makes a little more than 2 loaves (maybe 2 loaves and about a dozen small muffins?) This is my go-to recipe anytime I have bananas getting too ripe, or need something quick to take somewhere! It's really moist, and you can add extras too!
Ingredients:
3 1/2 cups flour
3 cups sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
4 eggs
2/3 cup water
1 cup vegetable oil
2 cups mashed bananas
1 cup walnuts (optional)
1 cup chocolate chips (optional)
Directions:
1. Heat oven to 350 degrees F.
2. Mix sugar, vanilla, eggs, water, vegetable oil, and mashed bananas together.
3. Add dry ingredients to wet mixture and mix well.
4. Add your extras, if you want.
5. Pour into 2 greased, or parchment lined, bread pans approximately 2/3 full.
6. Bake for approximately 1 hour, until toothpick comes out clean when inserted in the center.
7. (For extra batter, pour into lined muffin pan and bake for approximately 20 minutes, or until done.).
