Gnocchi With Goat Cheese and Sunblushed Tomato Salad

Ready, Set, Cook! Special Edition Contest Entry: The dish was inspired with the stipulated ingredients in your competition. I think my recipe uses the ingredients on offer extremely well. Unfortunately the form in which the ingredients come haven't been made clear, so I'm assuming the alfredo sauce is already made and the sunblushed tomatoes are from a jar. The frozen mashed potatoes will have to be defrosted and dried in a kitchen towel before the flour is added and the gnocchi formed. The tomatoes will have to be drained and placed on kitchen paper before use. Mashed potato is very versatile and can be made into interesting and innovative dishes. I love gnocchi, boiled or fried but I have chosen to serve the gnocchi boiled in this recipe then wrapped in the alfredo sauce. The grilled goat's cheese and soft vibrant tomatoes compliment the soft sensuous textures of the dish. Finely chopped cilantro scattered over completes the bright appetizing mid week supper.
Ingredients:
1000 g simply potatoes traditional mashed potatoes, dried in a kitchen towel to absorb any excess moisture
400 g plain flour
salt and pepper
1 pint alfredo sauce
400 g shrimp, cooked and peeled
4 green onions, finely chopped
200 g goat cheese, cut in half
salt and pepper
cilantro, a good handful of torn basil and finely chopped
110 g sun-dried tomatoes, chopped
1 teaspoon balsamic vinegar
Directions:
1. Sprinkle 'mashed potatoes' with the flour and salt and pepper. Knead into a smooth firm dough, then roll into a sausage shape 1 cm thick, and then cut into 2.5 cm sphere shaped pieces. Simmer a large pan of salted water and cook in small batches until the gnocchi floats, scoop out and cook remaining.
2. Warm through the 'Alfredo sauce' and fold in the gnocchi and cooked 'prawns' and green onions, keep warm.
3. Heat a griddle pan and brush with olive oil, place cheese onto it and cook 2 mins each side. Add the remaining ingredients to a bowl and mix together. Place onto a plate with the cheese on top and spoon the prawn gnocchi beside it.
