This is a family favourite, passed down from my husband's aunt. The bread is very easy to make. It tastes much better that the rice breads you pay a fortune for at the grocery store. It is also much more nutritious. Read more . I tend to play with the flour combinations - but always keep tapioca in the mix.
Ingredients:
2 cups gluten free flour mix
1 tsp. baking soda
2 tsp. baking powder
1 tsp. zanthum gum
3 tablespoons of ground flax seed
1 tsp cinnamon (optional)
1/3 cup of cranberries or raisins (optional)
1 cup plain yogourt
1/2 cup water
gluten free flour mix (makes 4 cups)
1 cup tapioca starch
1 cup chickpea flour or quinoa flour
1/2 cup sorghum flour or almond flour
1/2 cup potato starch
1 cup amaranth, rice flour or buckwheat flour
Directions:
1. Pre-heat oven to 375 F
2. Cover a cookie tray with parchment paper or grease an 8X 8 round baking pan or loaf pan
3. Blend dry ingredients
4. Add water/yogourt mix (just enough moisture so that flour is all stirred in)
5. Pour dough into pan or place on cookie try in small lumps to make biscuits.
6. Bake for 20-22 minutes
