Gluten Free Tropical Rice

This pairs nicely with baked fish or other shellfish. I use extra light olive oil for its mild flavor
Ingredients:
1 cup brown rice
1 navel orange
4 kiwi fruits
1 bunch green onion
5 garlic cloves
1/2 cup fresh cilantro
6 tablespoons olive oil
6 tablespoons brown sugar
6 tablespoons red wine vinegar
salt
Directions:
1. Cook brown rice.
2. Zest orange and put in a large mixing bowl.
3. Slice orange, kiwi and green onions and add to bowl.
4. Mince garlic and chop cilantro and add to bowl.
5. In a separate bowl mix oil, sugar and vinegar.
6. Stir in rice and vinaigrette.
7. Serve room temperature.
