Gluten Free Pancake / Waffle Mix

This is a recipe from that I have modified somewhat. I have not made pancakes out of this mix, but the waffles were light, fluffy and delicious.
Ingredients:
1 cup brown rice flour
3 tablespoons tapioca starch
1/3 cup potato starch
2 teaspoons white sugar
1 1/2 teaspoons baking powder (gluten-free)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon guar gum
2 eggs (i use extra large)
3 tablespoons canola oil
1 cup almond milk (minus 1 tbsp)
1 tablespoon lemon juice
1 cup water
Directions:
1. 1. Mix all dry ingredients together.
2. 2. Add wet ingredients and stir well.
3. 3. Mix will seem watery in consistency, but the recipe makes really fluffy waffles.
