2 1/3 cups baking mix
1/4 cup canola oil
2 eggs
1 teaspoon vanilla
1 cup soymilk
Directions:
1. preheat oven to 400.
2. grease 12 muffin pan.
3. Mix all ingredients & beat until smooth.
4. bake for 25-35 minutes.
