Gluten-Free Morning Glory Muffins

A combination of tastes to fill your mouth. Quick and easy. For vegan, use egg replacer of choice for eggs.
Ingredients:
1 cup gluten-free flour
1 teaspoon xanthan gum
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/8 cup sucanat
1/4 cup unsweetened coconut
1 cup carrot, grated
1/4 cup raisins
1 small mcintosh apple, diced
2 eggs
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1 teaspoon orange extract
1/4 cup soymilk
Directions:
1. Preheat oven to 350°F.
2. Mix dry ingredients.
3. Mix wet, then add into dry.
4. Fill cups to about 2/3 cup full.
5. Bake for about 22 minutes.
