For those that can eat oatmeal.This makes alot and you'll feel pretty smug knowing how little it cost to make and how good it tastes.I actually prefer using quick oats as I use granola mostly to put on yogurt.You can add sesame seeds or use all seeds,pumpkin or sunflower if allergic.
Ingredients:
3 cups gf oatmeal,quick cooking or rolled
1/2 cup chopped nuts,walnuts pecans,or almonds etc
1/2 cup crushed corn or rice chex cereal
1/3 cup honey ( i use half honey,half pure maple syrup )
1/2 cup sunflower or pumpkin seeds (pepitas)
1/2 cup grated coconut
1/3 cup brown sugar
1/4 cup vegetable oil
2 tbls. warm water
1/2 tsp.salt
1 tsp vanilla
Directions:
1. Preheat oven to 250 degrees.Lightly grease a large baking sheet.
2. In a large bowl,combine all dry ingredients.
3. In a seperate bowl,combine honey,brown sugar,oil,water,salt and vanilla.Stir well.
4. Pour over oat mixture,and stir.
5. Spread out on cookie sheet.
6. Bake one hour,stirring every 15 minutes.Remove from oven,cool before serving.Store in an airtight container.
7. You could add almond extract instead of vanilla,or add a tsp. of cinnamon.Once granola is out of oven you can also add dried fruits of your choice.
