Gluten Free Dairy Free Natural Mixed Berry Muffins

These Muffins are Gluten + Dairy free and only use Agave or Stevia as a sweetener. They are a great way to have a sweet and healthy treat.
Ingredients:
1 tbsp potato flour
1/4 cup tapioca flour
1 tsp baking powder
2 tbsp vanilla extract
2 eggs
1 cup almond milk
1/2 cup butter
1 tbsp cinnamon, ground
5 tbsp agave or stevia (natural sugar substitutes)
1 cup strawberries
2 cups blackberries
1/2 cup raspberries
Directions:
1. mix all dry ingredients, add eggs, butter, almond milk, agave+ vanilla.
2. mix well till consistency is smooth.
3. slowly stir in fruit.
4. makes about 20 small cupcakes
5. hint for fruit - Freeze the berries, then let them thaw out before adding them to the mixture... this lets the fruit release its own syrup adding a great taste to the muffins.
