A sweet, rich cookie loaded with chocolate and butterscotch chips. Enjoy Life makes a great allergen-free chocolate chip that you can get at Whole Foods. Bob's has gluten free oatmeal. Substitute Earth Balance for the butter if you can't have dairy.
Ingredients:
1/2 cup rice flour
1/4 cup potato starch
1/4 cup tapioca flour
1 cup brown sugar
1/2 cup oatmeal
1/2 cup butter
1 egg
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon xanthan gum
6 ounces chocolate chips
6 ounces butterscotch chips
1 teaspoon salt
Directions:
1. Cream butter, sugar and egg.
2. Add dry ingredients.
3. Drop by teaspoonfuls onto a greased cookie sheet.
4. Bake at 350 for 8 minutes.
