Gluten Free Chocolate Chip Oatmeal Cookies

My favorite cookies, a must have
Ingredients:
8 tablespoons margarine
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon pure vanilla extract
1 teaspoon xanthan gum
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
3 cups quick oats
10 ounces semi-sweet chocolate chips
Directions:
1. Cream butter and sugars together.
2. Add eggs and vanilla.
3. Blend dry ingredients except oats into butter mixture.
4. Add oats 1 cup at a time.
5. Add chocolate chips.
6. Allow to cool in refrigerator while over preheats to 375.
7. Using cookie scoop, portion dough into 50 cookies.
8. Bake for 7-8 minutes, making sure to remove from pan immediately.
9. Cool on wire racks.
