Gluten Free Casein Free Applesauce Muffins

Great celiac-friendly afterschool snack or breakfast-on-the-go.
Ingredients:
1 cup rice flour
1/2 cup cornstarch
1/2 cup sugar
1 1/2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon guar gum
1 cup applesauce
1/2 cup canola oil
1/4 cup rice milk
1 egg
Directions:
1. Preheat oven to 400 degrees Farenheit and line 12-cup muffin pan with paper liners.
2. Combine all ingredients in large mixing bowl; mix just until blended.
3. Divide muffin batter evenly in prepared pan.
4. Bake for 12-18 minutes or until toothpick inserted in center of one muffin comes out clean.
