Gluten-free Canned Cream Of Celery Soup

Not only is it GF but so much healthier than a canned soup. Great for all those recipes calling for a cream of. This smells so good it would make a lovely soup as is,to me it smells like Thanksgiving. Read more .
Ingredients:
2 cups chopped celery, ( i like to peel the string on the outside first)
1/3 cup chopped onion
2 tbl.olive oil
1 tsp.salt
1/8 tsp. black pepper
1/2 tsp. dried parsley
2 cups water
1 tbl. tapioca starch
1/2 cup half & half
Directions:
1. Saute celery and onions in oil,add salt and pepper,parsley.Cook until translucent.
2. Add water,simmer 30 minutes.Remove from heat and let cool a few minutes.
3. Place all in food processor or blender,process until smooth.
4. Return to pan,bring to boil.
5. Mix tapioca into half & half,stir well.Add to pan with celery mixture,stirring frequently as it cooks and thickens.Careful not to burn bottom.
6. Makes appx. 2 cups.
7. This tastes so good you could eat it as a soup!!
