Gluten free Apple Cinnamon Muffins

This recipe was in a handbook given to me by the Coeliac Society - Melbourne. I think they taste rather good.
Ingredients:
1/3 cup sugar
1 cup rice flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon bicarbonate of soda
2 eggs
3 tablespoons canola oil
1 apple, grated
1 teaspoon cinnamon
Directions:
1. Combine the dry ingredients in a bowl.
2. Mix the wet ingredients in another bowl and quickly add to the dry ingredients.
3. Add any additional flavourings and stir very briefly.
4. Put into greased or paper lined muffin cups and bake in a moderate oven (180 degrees) until golden and firm to the touch.
5. Makes about 12 medium sized muffins.
