Glazed Spam and Sweet Potatoes

Ingredients:

  • 1/2 cup brown sugar
  • 1/3 cup water
  • 1/2 cup raisins
  • 2 tbsp vinegar
  • 1 pinch salt
  • 1 tbsp butter
  • 1/2 cup grape jelly
  • 1/4 tsp clove
  • 1/4 cup milk, warmed
  • 1 tbsp butter
  • 1 (12 oz) can spam
  • 12 miniature marshmallows

Directions:

  1. Boil sweet potatoes for 30 minutes or until cooked; drain.
  2. Meanwhile, make raisin sauce. Mix brown sugar, water, raisins, vinegar, Worcestershire sauce, salt, 1 tbsp butter, jelly, and cloves in a saucepan. Boil for 7 minutes.
  3. Mash sweet potatoes with milk and 1 tbsp butter. Season with salt and pepper.
  4. Score top of Spam loaf in diamond pattern. Place in a shallow baking dish and spoon the sweet potatoes around it.
  5. Bake at 350 for 20-25 minutes, basting loaf several times with raisin sauce.
  6. In the last five minutes of cooking, arrange marshmallows on sweet potatoes and allow to brown.
