Glazed Parsnips With Apples And Orange

From The Victory Garden archives...love the flavor of roasted parsnips, the addition of the apples, orange and tarragon make it special enough for celebratory meals.
Ingredients:
1 lb. of parsnips, peeled and cut in 3 inch chunks
2 apples, peeled cored and cut in 8 wedges
1 large orange, sliced unpeeled, cut the larger slices in half
4 tbsp of butter melted
1/2 tsp of dried tarragon leaves
2 tbsp of brown sugar (or brown sugar splenda)
3 tbsp of fresh squeezed orange juice
Directions:
1. Preheat oven to 325 degrees.
2. Butter a baking dish.
3. Prep veggies and fruit.
4. Melt butter with sugar, tarragon and orange juice add this to the fruit and parsnips.
5. Stir well to coat.
6. Pile into baking dish, bake covered 30 minutes.
7. Stir ocassionally.
8. Uncover and bake another 15 minutes longer to glaze the vegetables.
9. Baste with juices and serve.
