I found this recipe for ribs when it was just too cold and inclement to even turn on the grill. While we still enjoy grilled ribs, this is a delicious change of pace. NOTE 1: Great alternative for those sensitive to tomatoes. NOTE 2: This is an excellent glaze for spare ribs, western ribs, baby back ribs, etc..... I usually use the amount of ribs on hand, not exceeding 3 packages.
Ingredients:
3 (1 lb) packages pork ribs, western (or any variety ribs)
3/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup brown sugar
3/4-1 1/2 teaspoon garlic powder
1 teaspoon lemon peel
3/4 teaspoon ginger
1/4 teaspoon clove
3/4 teaspoon salt
1/8 teaspoon pepper
1 bay leaf (optional)
3/4 cup orange juice
2 tablespoons lemon juice
Directions:
1. In foil lined pan, place ribs on rack. Sprinkle with salt and pepper.
2. Bake uncovered at.
3. 400 degrees for 30 minutes. Turn ribs.
4. 350 degrees for 30 minutes. Make glaze.
5. GLAZE - Bring to a boil. Reduce heat and simmer uncovered for 15 minutes. Discard bayleaf.
6. Remove ribs from rack. Drain drippings. Return ribs to pan. Brush with glaze.
7. Bake uncovered at 350 degrees for 45 to 60 minutes, until tender. Baste frequently.
