This recipe was given to me by a friend and award winning competition barbecuer. It is his rainy day or dead of winter recipe that calls for cooking the ribs in the oven. As long as you maintain the low temperature of 250°F in the oven, the plastic wrap will not melt on you.
Ingredients:
12 ounces dr. pepper cola
4 ounces prepared barbecue sauce
1 (2 1/2-2 3/4 lb) slab baby back ribs
3 tablespoons molasses
1/2 cup dark brown sugar
2 tablespoons coarse ground sea salt
2 tablespoons ground celery seed
2 tablespoons paprika
1 tablespoon chili powder
1 teaspoon cayenne pepper
1/4 teaspoon ground allspice
Directions:
1. Pour Dr. Pepper into a small saucepan and bring to a simmer over medium-high heat. Simmer until reduced by 3/4 or until 3 ounces is left in the saucepan. Stir in BBQ Sauce. Remove from heat and set aside.
2. Preheat oven to 250°F.
3. Rub the entire slab of ribs with molasses.
4. To prepare rub, combine all dry ingredients in a mixing bowl. Then evenly coat the entire surface with the rub. Wrap the ribs in 2 layers of plastic wrap. Wrap again with aluminum foil.
5. Place the ribs on a sheet pan and bake for 4 to 5 hours, or until a bone can be easily pulled from the meat. Remove from the oven and remove foil and plastic wrap.
6. Raise the oven temperature to 450°F.
7. Glaze the entire slab of ribs with the sauce. Place the ribs back in the oven, uncovered.
8. Cook for approximately 5 minutes, or until the sauce starts to bubble and caramelize.
9. Remove from the oven and apply additional sauce as desired.
10. Using a sharp knife, slice the ribs into portions between the bones and serve.
