Gingery Buckwheat Noodle And Green Bean Salad

Ingredients:
6 ounces firm tofu
2 teaspoons soy sauce
1 pound buckwheat noodles
6 ounces green beans trimmed and cut into 1 lengths
2 tablespoons dark sesame oil
1/4 cup chopped fresh cilantro
2 tablespoons roasted sesame seeds
asian dressing
3 cloves garlic minced
2 tablespoons minced fresh ginger root
3/4 cup olive oil
1/3 cup rice wine vinegar
1/2 cup soy sauce
3 tablespoons honey
1/4 cup water
Directions:
1. Slice the tofu and sprinkle slices with soy sauce then set aside.
2. Bring a large pot of water to a boil and add a generous amount of salt.
3. Add noodles and cook for 2 minutes then add the green beans and cook 5 minutes longer..
4. Drain noodles and toss with the sesame oil in a bowl.
5. Add remaining ingredients then toss and serve.
6. To make dressing combine all ingredients in a jar with a tight fitting lid and shake well.
7. Remove lid and heat jar in microwave for 1 minute just to dissolve the honey.
