Gingered Tofu Peanut Spread

Tasty, high protein sandwich spread
Ingredients:
1/2 pound extra firm tofu
1 tbsp soy sauce
2/3 cup peanut butter
1 tbsp lemon juice
1 1/2 tsp minced fresh ginger
1 clove garlic
2 tbsp water
Directions:
1. Put tofu and soy into a blender or food processor and puree until a smooth paste forms. Scrape into a bowl.
2. With a fork, vigorously beat in all of the remaining ingredients. Let sit 30 minutes at room temperature before serving.
