Ingredients:
4 peaches, halved and pitted
1/3 cup sugar
1/4 cup lemon juice
2 tablespoons water
1/2 teaspoon ground ginger
28 g (4 cookies) gingersnaps, crushed
Directions:
1. Preheat oven to 425°F.
2. Place peaches cut-side up in a shallow 1-quart baking dish.
3. Bring sugar, lemon juice, water and ginger to a simmer in a small saucepan. Pour over the peaches and sprinkle with gingersnaps.
4. Bake until the peaches are tender and the syrup is thickened, 15 to 20 minutes.
