Savoy cabbage acts as the foundation for this Asian inspired slaw featuring Jicama, Arugula and Cream Ginger Dressing.
Ingredients:
6 cups cabbage, savoy
2 cups fresh baby arugula
2 cups jicama (yambean) raw
1/4 cup ground almonds
1 cup parsley, raw fresh
1/4 cup parmesan reggiano
2 cups creamy ginger dressing
Directions:
1. Finely shred the cabbage, arugula and jicama.
2. Mince the fresh parsley.
3. Toast the ground almonds until lightly brown.
4. Combine ground almonds, parsely, Creamy Ginger Dressing and parmesan. Pour dressing over the shredded vegetables and toss until thoroughly coated.
5. Chill at least 1 hour before serving.
