Grated ginger adds a bit of zip to Gingered Carrot Smoothies.
Ingredients:
1 cup plain 2% reduced-fat greek yogurt
2 cups chopped peeled carrot
1/2 cup carrot juice
1 tablespoon grated peeled fresh ginger
1 1/2 cups crushed ice
1/4 cup honey
Directions:
1. Place yogurt in a blender. Place carrot, carrot juice, and ginger in a food processor. Process until smooth. Strain carrot mixture through a fine sieve; discard solids. Add carrot mixture, crushed ice, and honey to blender; process until smooth.
