Gingerbread Toast

Ingredients:
2 1/2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup minced crystallized ginger
1/2 teaspoon ground ginger
1/4 teaspoon cinnamon
1/2 cup softened butter
3/4 cup sugar
1 teaspoon vanilla
2 eggs
2/3 cup blanched toasted coarsely chopped almonds
2 teaspoons milk
sugar, for topping
Directions:
1. Preheat oven to 375.
2. Combine flour, baking powder, salt, crystallized ginger, ground ginger and cinnamon.
3. In a separate bowl beat butter and sugar until fluffy. Beat in vanilla and eggs. Stir in the flour mixture and nuts.
4. Divide the dough in half and shape each half into 12x2 strips on a foil-lined baking sheet, smooth the surface.
5. Brush each with milk; then sprinkle wiht sugar.
6. Bake 18-20 minutes. Remove and reduce temperature to 300.
7. Let strips cool on a wire rack for 15 minutes.
8. Place the strips on a cutting board and use a serrated knife to cut each strip crosswise on the diagonal into 1/2 in thick slices.
9. Place slices on the baking sheet and bake 10 minutes, Turn the slices and bake 10 more minutes.
10. Turn off the heat and allow the toasts to cool in the oven, leaving the door slightly open.
