Ingredients:
1 1/3 cups unbleached flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ginger
1 teaspoon cinnamon
1/4 teaspoon ground cloves (optional)
1 egg
1 1/4 cups milk
1/4 cup molasses
3 tablespoons canola oil
butter or oil, for griddle
Directions:
1. Sift together the dry ingredients.
2. Beat egg well.
3. Add milk, beat in molasses, then canola oil. Mix in dry ingredients until smooth.
4. Using a quarter cup measure, spread pancake on preheated griddle and cook until golden brown.
5. Turn pancake to finish other side.
