Gringerbread pancakes! 'Nuff said.
Ingredients:
1 1/2 cups flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon allspice
1 jar crystallized ginger, mccormick bottle size, minced
2 eggs
1 1/8 cups milk
3 tablespoons butter, melted
Directions:
1. In a bowl, whisk flour, sugar, baking powder, salt, cinnamon, ginger, allspice and crystallized ginger. In separate bowl, beat eggs. Add milk and butter and mix well. Pour wet ingredients into dry ingredients and gently stir until just combined. If too thick, add additional milk a tablespoon. at a time
2. Preheat griddle & cook.
