Gingerbread Muffins

This recipe was adopted with love in February 2006.
Ingredients:
2 cups flour
2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup sugar
1/2 cup applesauce
1/4 cup apple juice
1/4 cup molasses
1 egg (or egg replacement)
2 tablespoons oil
Directions:
1. Stir together dry ingredients.
2. Add wet ingredients.
3. Mix only until batter is lumpy.
4. Pour into muffin pans.
5. Bake at 350 for 20 to 30 min until set.
6. Let cool.
