Gingerbread - not as in cookies - but as in bread. Enjoy!
Ingredients:
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp. salt
1 1/2 tsp. ground ginger
3/4 tsp. cinnamon
1/3 cup vegetable oil
1/2 cup brown sugar, firmly packed
1 egg, well-beaten
1/2 cup molasses
1/2 cup boiling water
Directions:
1. Sift together first six ingredients. Make a well and add first the oil, then brown sugar and lastly the egg.
2. Mix molasses and boiling water and add to batter. Beat until smooth.
3. Turn into a greased 8 inch square pan.
4. Bake in a 350ºF oven 35 to 40 minutes.
