Ginger Tea Granita

Ingredients:
2 quarts water
1/4 to 1/3 cup grated fresh ginger
1/3 cup lemon juice
1/4 cup honey
4 lipton family size tea bags
1 1/2 cups sugar
garnish: fresh mint sprigs
Directions:
1. Bring first 4 ingredients to a boil in a large saucepan. Reduce heat, and simmer, stirring occasionally, 5 minutes. Remove from heat.
2. Add tea bags; cover and steep 5 minutes. Remove tea bags, squeezing gently; add sugar, stirring until dissolved. Cool.
3. Pour tea through a wire-mesh strainer into a 13- x 9-inch baking dish.
4. Freeze 8 hours.
5. Remove mixture from freezer 20 minutes before serving. Process mixture, one-fourth at a time, in a food processor or blender until smooth.
6. Serve immediately, and garnish, if desired.
