Ingredients:
1/2 cup raisins
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup bran
1 1/4 cups soy milk
1/4 cup vegetable juice
1/3 cup applesauce
1 teaspoon vanilla extract
1/4 cup chopped crystallized ginger
Directions:
1. soak raisins in hot water
2. Mix together dry ingredients, create a well and add the wet ingredients. Mix together until just combined. Add raisins and crystallized ginger.
3. Fill muffin cups and bake at 400 deg. for 20 - 22 minutes until a toothpick inserted comes out clean.
