Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon nutmeg
1 cup apple juice
3/4 cup soymilk
1/3 cup applesauce
2 tablespoons corn oil (or veg oil)
4 tablespoons sugar
2 teaspoons vanilla extract
1 bosc pear, grated
Directions:
1. preheat the waffle iron according to the manufacturer's directions.
2. sift together the flour, baking powder, baking soda, salt, and spices in a large mixing bowl.
3. in a med-sized bowl, mix together the juice, soy milk, applesauce, oil, sugar, and vanilla until well combined.
4. create a well in the center of the flour mixture and slowly blend the wet ingredients into the dry until combined.
5. fold in the grated pear.
6. make your waffles according to the directions on the iron.
